Default Britax Frontier - problem installing Jetta 2001

Hello,
I was so excited to get my Britax Frontier. However both my husband and I have tried and tried again to install the seat in our 2001 Jetta. We are trying to install in the center seat (as we are both tall and cannot drive/ride with the front seats all the way forward). Since we are doing center seat, we need to use the shoulder/lap belt for installation. We have tried both short and long path installations - short path left the seat loose and we could not tighten any further; our seatbelts weren't long enough for the long path.

Anyone have any tips on installing correctly? Or maybe a suggestion for a seat that may work better (looking for a seat so my daugher can be in 5-point harness for a long time - she is currently 39 inches and 32 lbs). She about to outgrow her Evenflo Triumph which installs nicely in the center seat of our Jetta - but she only has an inch left before she outgrows it.

Where does she only have an inch left in the Triumph? At the top of her head or at her shoulders? How old is she?

When FF, the top harness slot must be at or above the shoulders. If you've got a whole inch there that could last at least a year
